Coffee to Water Ratio: Every Brew Method

The single most impactful variable in coffee quality — before grind size, water temperature, or equipment — is the ratio of coffee to water. Too little coffee and the water over-extracts what is there, producing bitter, hollow flavor. Too much and the water runs out of extraction capacity early, producing sour, dense, sharp results. Why Weight Beats Volume

A "tablespoon" of coffee varies by 3–4 grams depending on grind size and roast level. A tablespoon of a light roast coarsely ground might hold 5g. The same tablespoon filled with a fine-ground dark roast might hold 8g. That 3g difference changes the ratio by 15–20% — enough to move a cup from ideal to noticeably under- or over-extracted. Ratio Reference by Method

Drip / Filter (Moccamaster, Chemex, V60)

1:15 to 1:17

60–67g per 1L. SCA certified machines target 1:16.7. Adjust within this range for strength preference. Start at 1:16, move to 1:15 for stronger, 1:17 for lighter.

French Press

1:12 to 1:15

67–83g per 1L. French press retains more water in the grounds (about 2g water per gram coffee) — compensate with a slightly stronger ratio than paper filter methods.

Espresso (single shot)

How to Calculate Your Ratio

Divide water weight by coffee weight. 300ml water ÷ 20g coffee = 15. That is a 1:15 ratio. To find the coffee dose for a target volume: divide water weight by your target ratio. 1000ml ÷ 16 = 62.5g. Round to the nearest gram.

For espresso, the calculation runs differently: dose is the dry coffee weight; yield is the wet weight of espresso in the cup. 18g dose × 2 = 36g target yield. Run the shot until 36g flows into the cup, then stop the pump. This is weight-based extraction control.

FAQ

Does the roast level change the ideal ratio?

Slightly. Dark roasts are denser with more soluble compounds per gram, so they can tolerate a slightly higher water-to-coffee ratio (1:17 vs. 1:15 for the same brew method). Light roasts are less soluble and often benefit from a slightly stronger ratio (1:14 to 1:15) to achieve the same extraction. These adjustments are small — a starting ratio of 1:15 to 1:16 works for all roast levels as a baseline, and taste-testing from there is more reliable than roast-specific calculations.

My Moccamaster instructions say to use 2 tablespoons per cup. Is that right?
